Lately, I’ve been obsessed with healthy eating, especially when it doesn’t taste like healthy eating. This salad contains ample sources of vitamin A, vitamin C, goat cheese, and olive oil.
The finished product is so beautiful, it brings a little tear to my eye. *sob*
Ingredients
- 1 bunch Kale, Leaves Torn Off The Stalks
- 2 tablespoons Dried Cranberries
- 4 ounces Goat Cheese
- 1/4 cup Orange Juice
- 1 small can of Mandarin Oranges, or 2-3 small Tangerines
- 2 Tablespoons Olive Oil
- 1 Teaspoon Honey (do not give to small children)
- 1 clove Garlic Grated
- Sea Salt to Taste
- Black Pepper To Taste
- 2Â Tablespoons Plain Greek Yogurt
Preparation Instructions
First, take one of the healthiest superfoods out there, kale. Tear the leaves off of the stalks. Then chop it into finely chopped pieces.
This looks gross at first, but it’s actually a delicious combination of Greek yogurt, garlic, orange juice, olive oil, salt, honey, and pepper that will quickly become your new favorite dressing.
Vigorously mix them together.
Toss the kale in half the dressing for a minute or so, then add the other half.
Stir in the goat cheese, mandarin oranges, and cranberries, and serve. This dish pairs really well with a seltzer water with lemon…very citrusy and fresh!
