I’m obsessed with spicy food, but I’m also tired of finding mostly oil-soaked, grease-laden fried dishes at restaurants.
So I was ultra pleased to make this roast chicken:
Start with:
- 2 chicken thighs and 2 drumsticks
- 1/2 cup of fat-free plain yogurt
- 3 tbsp of fresh oregano
- 3/4 tsp of chili powder
- Salt and pepper to taste
- Chili peppers (to your taste)
- Coffee (optional)
1. Preheat oven to 400 degrees Fahrenheit.
2. Combine yogurt, oregano, chili powder, salt, and pepper in a bowl. Add the chicken and toss to coat.
3. Transfer to a roasting pan, pre-treated with a light dusting of olive oil, and roast for 20-25 minutes.
4. Add chilis to taste.
5. Transfer the juices from the roasting pan into a frying pan. Add half a cup of coffee to the mixture, and let boil for 5-10 minutes. Dip the chicken in as desired.
It’s super delicious, and only about 300 calories per 2 piece serving! I love it.
